11th May 2026 marked the official commencement of The Signature Food Fest 5th Edition judging journey, beginning with an exquisite dining session hosted by E West Restaurant under the esteemed Upper Palace Dining Group.

                            

The evening unfolded with sophistication as preparations were meticulously arranged for the first official panel judging session. From table settings to culinary presentation, every detail reflected the restaurant’s dedication to authentic Chinese dining excellence and premium hospitality.

Representing the host establishment, Mr. Andy Yip of Upper Palace Dining Group General Manager extended a warm and generous welcome to all invited judges and guests, creating an atmosphere of refined celebration and culinary appreciation.



A notable arrival during the evening was Head Judge Datuk Gordon Leong, who entered in a striking fresh orange ensemble, instantly energizing the room as fellow judges warmly greeted him at the elegantly prepared judging table. Joining the session were Permanent Judge Rory Richardson alongside TSFF SME Advisor & Judge, Adjunct Prof. Jessie Jong (A.S.D.K), both ready to begin the much-anticipated evaluation.

The judging panel was further strengthened by distinguished invited media judges representing the umbrella media network of FAVSTYLE Magazine. Among them were Ms. Geena from Hello Sabah representing Ms. Cassie, Mr. Omar Willie from MY KKCity, and Belinda Faith from Sabah KOL Media Alliance, bringing together influential voices from Sabah’s lifestyle and media landscape.

The dinner session officially commenced at 7:15PM, unveiling a specially curated lineup of signature dishes prepared exclusively for the judges. Throughout the evening, the panel experienced a luxurious journey through authentic Chinese cuisine, featuring:

  • Chicken Soup with Maotai Root
  • Steamed Fish Lips with Special Spicy Sauce
  • Typhoon Shelter Style Prawns
  • Braised Sea Cucumber, Mushroom & Fish Maw with Nai Pak
  • And the restaurant’s celebrated signature creation, the Salt Baked Free Range Chicken

Each dish was thoughtfully presented, balancing heritage flavors with refined culinary craftsmanship. The judges carefully evaluated every element including taste, presentation, creativity, texture, and overall dining experience through the official TSFF judging forms.
