Signature Food Fest 5th Edition Continues at Tangerine, The Palace Hotel Kota Kinabalu

The culinary journey of the 5th Edition Signature Food Fest continues with another remarkable destination at The Palace Hotel Kota Kinabalu, where elegance, serenity, and gastronomy meet atop the hidden side of the iconic “Istana Hill.” Often celebrated as one of Kota Kinabalu’s hidden sanctuary gems, the hotel offers a tranquil escape within the city while remaining strategically located near several of Sabah’s iconic tourism hotspots. Conveniently, it is also situated just approximately 10 minutes away from Kota Kinabalu International Airport, making it an ideal destination for both local and international travelers seeking refined hospitality and culinary indulgence.

For the very first time, Tangerine proudly participates in the Signature Food Fest, presenting a dish that instantly captured the attention of the judging panel, the chef’s special Oxtail Asam Pedas. Rich, aromatic, and deeply comforting, the dish became the highlight of the afternoon tasting session.

The judging session was led by Head Judge Datuk Gordon Leong alongside an esteemed panel featuring Adjunct Prof. Jessie Jong Chun Jin (A.S.D.K), Omar Willie - MY KKCity, Belinda Faith - Sabah KOL Media Alliance, representatives from BorneoNews.net - Ain, Hello Sabah, Writer On-The-Go Lorena Binisol, as well as Ben Liew - Delicious Sabah.

Beyond the signature dish, the afternoon unfolded into a flavorful culinary experience as the chef introduced several additional creations specially prepared for the judges to explore. Surprisingly, the Oxtail Asam Pedas emerged as an unforgettable standout. Its bold yet balanced flavor profile left a lasting impression on the judges, combining traditional richness with a contemporary twist that elevated the overall dining experience.

Chef Musalun shared that the rich and distinctive taste of the Oxtail Asam Pedas is part of his own secret creation, carefully improvised with unique flavor techniques to ensure every guest who tastes it instantly falls in love with the dish. Deeply flavorful, comforting, and beautifully layered with spices, the dish reflects both passion and culinary craftsmanship.














To further complete the gastronomic session, Chef Musalun also presented two additional dishes, the flavorful Peri Peri Chicken and the irresistibly satisfying Sambal Udang Petai. Both dishes delivered bold local flavors with generous richness, making the entire tasting session truly sumptuous and memorable.
