BEYOND THE PLATE - The Visionaries Shaping Sabah’s Next Culinary Chapter | Venue at Hyatt Centric Kota Kinabalu - Feature in Favstyle Media Magazine
There is a story behind every exceptional plate, and in Sabah, that story is becoming increasingly sophisticated, distinctive and influential.
Favstyle Media Magazine was honoured to be part of “Beyond the Plate: Shaping Sabah’s Future Food Scene”, an intimate and thought-provoking forum that brought together leading culinary talents, restaurateurs, hospitality professionals and the emerging generation of culinary creators from across Sabah.
Representing Favstyle Media Magazine was Editor-in-Chief, Mr Alfred Allen Ginsos, whose presence reflected Favstyle’s continuing commitment to engaging with the personalities, ideas and movements shaping Sabah’s contemporary lifestyle landscape.
Hosted at the elegant Hyatt Centric Kota Kinabalu, the gathering offered far more than a conversation about food. It became a meeting point for culture, creativity, hospitality, entrepreneurship and the evolving identity of Sabah through its culinary expression.
Adding another meaningful dimension to the occasion were culinary students from several academies, who attended the forum as part of an inspiring exchange between established industry professionals and the next generation of culinary talent.
Their presence underscored an important truth: the future of Sabah’s food scene does not belong solely to those already behind the kitchen pass. It is also being shaped by young aspiring chefs and hospitality professionals who are learning, observing and preparing to carry the state’s culinary story forward.
Among the distinguished voices at the forum was Chef Top Russell of Mia Restaurant, joined by Linn Vong of Limau and Linen, Emerson of Hearth Restaurant, David Lee of Ah Yen Sandakan Noodle, and Kong Han of In Restaurant.
Together, they explored the forces transforming Sabah’s gastronomy scene: the importance of preserving local identity, the emergence of new culinary narratives, the changing expectations of modern diners, and the opportunities awaiting the next generation of hospitality entrepreneurs.
For the students in attendance, the forum offered something particularly valuable: a window into the realities, possibilities and responsibilities of building a career within Sabah’s evolving culinary and hospitality landscape.
What emerged was a compelling reminder that Sabah’s food culture is no longer simply a reflection of its rich heritage. It is becoming a platform for innovation, destination appeal, creative influence and professional opportunity.
For Favstyle Media Magazine, Beyond the Plate represented precisely the kind of conversation that deserves a place in the wider lifestyle narrative. The future of Sabah is being shaped not only through established restaurants and hospitality institutions, but also through culinary academies, classrooms, kitchens, dining rooms and the young talents preparing to make their mark.
From the artistry of the chef to the vision of the restaurateur, from the warmth of hospitality to the curiosity of a culinary student, every voice contributes another chapter to a food story still being written.
And Sabah’s next chapter promises to be deliciously ambitious.
