At the heart of the collaboration is acclaimed guest Chef Phubase Chuprakong from Aquila Restaurant, Chiang Mai, who joins forces with Chef Elroy of ON22. Together, they have curated a menu that celebrates authentic Thai recipes while embracing the vibrant culinary identity of Sabah.
Guests begin their journey at an elegant Salad Bar, featuring vibrant creations such as Young Papaya Salad with Spicy Som Tam and Dried Shrimp, Grilled Prawn with Pomelo Salad and Coconut Foam, alongside refreshing wakame and mussel salads. Freshly baked sourdoughs, baguettes, country breads, artisanal cold cuts, and creamy hummus complete the opening chapter.
The experience continues with comforting Kaeng Nom, a fragrant Lanna herbal beef soup, before guests explore the live pasta station and savour the aromatic "Krapao" Roasted Chicken, infused with classic Thai basil flavours.
The evening truly shines through its signature sharing plates. Highlights include Phad Cha, featuring grilled squid with stir-fried eggplant and chicken, the luxurious Kaeng Poo Phuket Crab Curry, tender Regency Fried Beef, and perfectly grilled local grouper finished with an invigorating spicy lime ginger sauce. Each dish reflects Chef Phubase's philosophy of balancing authenticity with modern presentation.
Accompanying the main courses are indulgent sides including Fat Crab Fried Rice, authentic Northern Thai chilli dips such as Nam Prik Noom and Nam Prik Goong Siep, together with the beloved local favourite, Sambal Kangkung.
No gastronomic celebration is complete without a spectacular finale. The Long Dessert Table presents a colourful collection of Asian-inspired sweets, including Lod Chong with Coconut Pudding, Mango Panna Cotta, Burnt Cheesecake, Pandan Onde-Onde Cake, Sago Gula Melaka, Chocolate Moist Cake, traditional Nyonya Kuih, fresh seasonal fruits, Bubur Cha Cha, and Red Bean Sago, offering a sweet ending to an unforgettable culinary journey.
For guests seeking an even more luxurious experience, premium add-on selections include Fresh Grilled Local Lobster, Soft Shell Crab Tempura, and a beautifully grilled Lamb Rack, elevating the dinner into a truly refined feast.
